BBQ Pulled Pork
This Butcher's Block Pork Butt Roast is cooked to absolute perfection in the crock pot, and the final results that are pull apart tender.
INGREDIENTS
Pork Butt Roast
Salt and pepper
1 onion, roughly chopped
3 cloves of garlic
2 tsp thyme
2 tsp chili powder

INSTRUCTIONS
Set a pan (cast iron preferred) over medium/high heat and season the roast with salt and pepper.
Sear the roast on all sides until browned, about 3 minutes per side.
Add the onion, garlic, spices, apple cider vinegar, and the pan drippings to the bottom of the slow cooker.
Place the roast in the slow cooker and cook on low for 6–8 hours (or 3–4 hours on high) until pull-apart tender; add 1–2 extra hours for larger roasts.
Discard excess fat, remove the roast from the juices, and shred with two forks; discard or reduce the juices to use as a sauce.
