Block Baron of Beef
If you’re looking for an inexpensive roast that has great flavor with the minimal help of salt and pepper and a little extra fat then the baron of beef will become a new favorite of yours. It’s an easy dinner for any night of the week! Cooks in just over an hour and the gravy comes together in less than 5 minutes.
INGREDIENTS
Baron of beef roast
Olive oil
Salt
Black pepper
Extra fat (optional, for added flavour)

INSTRUCTIONS
Remove roast from the fridge 1 hour before cooking to bring to room temperature.
Preheat oven to 400°F. Rub roast with olive oil, salt, and pepper.
Place roast fat-side up in a cast iron or roasting pan, adding extra fat if desired.
Bake uncovered at 400°F for 15 minutes. Reduce oven to 350°F and roast 18 minutes per pound, or until internal temperature reaches 120°F for medium rare (or 130°F for medium).
Remove from oven and rest under loose foil for 15 minutes until temperature rises to 135°F (medium rare) or 145°F (medium). Slice thinly and serve.
