Butcher's Block Beef Gravy
Rich, savoury gravy made from roast beef pan juices and stock.
INGREDIENTS
2 tablespoons beef fat or butter
2 tablespoons roast beef pan drippings
3 tablespoons all purpose flour
2 cups beef stock, warm
Salt, to taste
Black pepper, to taste
Finely chopped fresh herbs such as thyme or parsley (Optional)

INSTRUCTIONS
Collect the pan juices.
Warm the pan.
Cook the flour.
Adjust seasoning to taste.
Deglaze, add stock, finish and season.
