Creamy Ground Beef and Mushroom Pasta Skillet
Comfort pasta with ground beef, mushrooms and a light cream and cheddar sauce over local pasta.
INGREDIENTS
500 grams Ground Beef
250 to 300 grams local prontisimo pasta
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, finely chopped
250 grams mushrooms, sliced
50 grams Medium Cheddar, grated, plus extra for serving

INSTRUCTIONS
Bring a large pot of salted water to the boil and cook the pasta according to the packet instructions. Keep aside a cup of the cooking water, then drain the pasta.
While the pasta cooks, heat the olive oil in a large pan over medium heat. Add the onion and cook for about 3 to 4 minutes until soft.
Add the garlic and mushrooms. Cook until the mushrooms have softened and any liquid has mostly cooked off.
Add the ground beef. Cook, breaking it up with a spoon, until there is no pink left and the meat juices run clear. For food safety, ground beef pieces should reach 160°F internally.
Stir in the tomato paste and cook for 1 minute. Pour in the beef stock and simmer for about 5 minutes.
