Seared Boneless Pork Chops with Honey Mustard Pan Sauce
Quick seared pork chops finished with a simple honey mustard pan sauce.
INGREDIENTS
4 Boneless Pork Chops
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon oil
1 small shallot or half an onion, very finely chopped
2 cloves garlic, finely chopped
1 tablespoon butter

INSTRUCTIONS
Pat the pork chops dry and season on both sides with salt and pepper.
Heat the oil in a large pan over medium high heat. Sear the chops for about 3 to 4 minutes per side, until golden.
Check one chop in the centre with a thermometer. For safe pork, you want at least 145°F with a short rest.
Remove the chops to a warm plate and cover loosely.
Turn the heat down to medium. Add the shallot and cook for about 2 minutes until soft. Add the garlic and cook for about 30 seconds.
