Sheet Pan Jalapeno Beef Sausages with Peppers and Onions
Easy tray of sausages, peppers and onions that can go straight onto plates or into rolls.
INGREDIENTS
6 Jalapeno Beef Sausages
3 bell peppers, mixed colours, sliced into strips or 1 bag whole small mixed colours
2 red onions, sliced into wedges
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper

INSTRUCTIONS
Heat the oven to 375°F.
Place the peppers and onions on a large baking tray. Toss with olive oil, salt, pepper, oregano and garlic.
Lay the jalapeno beef sausages on top of the vegetables.
Roast for about 30 to 35 minutes, turning the sausages once, until they are browned and the vegetables are soft and lightly charred at the edges.
Check one sausage in the centre with a thermometer. It should read at least 160°F inside for safe cooked sausage.
